टमाटर में भरपूर मात्रा में कैल्शियम, फास्फोरस व विटामिन सी पाये जाते हैं। एसिडिटी की शिकायत होने पर टमाटरों की खुराक बढ़ाने से यह शिकायत दूर हो जाती है।[कृपया उद्धरण जोड़ें] हालाँकि टमाटर का स्वाद अम्लीय (खट्टा) होता है, लेकिन यह शरीर में क्षारीय (खारी) प्रतिक्रियाओं को जन्म देता है। लाल-लाल टमाटर देखने में सुन्दर और खाने में स्वादिष्ट होने के साथ पौष्टिक होते हैं। इसके खट्टे स्वाद का कारण यह है कि इसमें साइट्रिक एसिड और मैलिक एसिड पाया जाता है जिसके कारण यह प्रत्यम्ल (एंटासिड) के रूप में काम करता है। टमाटर में विटामिन ए काफी मात्रा में पाया जाता है।
